This PhD project explores how protein structure and morphology govern the properties of protein-based biomaterials. Waterborne electrospinning produced α-lactalbumin (ALA)-based multiprotein and amyloid-rich nanofibers with tunable water stability and release behavior. The results reveal distinct contributions of protein composition, secondary structure, and amyloid morphology to material performance. Extending this water-based approach, dissolving ALA microneedles achieved skin penetration and dermal protein delivery, providing design principles for next-generation sustainable and multifunctional protein biomaterials.
