Sustainable biomaterials from plant proteins: Green electrospinning and applications in drug delivery
The project aimed at generating eco-friendly plant protein-based nanofibers by green electrospinning, using potato, pea and soy protein isolates as the main building blocks. A biophysical workflow was developed for the characterization of the nanofibers, with focus on their structural features as well as on key properties of the material for biomedical applications. Finally, selected plant protein isolates were tested as carriers for drug delivery applications.
